Practical PDF-ing in Linux

It's great to have so many word processors that run in Linux that can export to pdf files. Such as OpenOffice.org and Abi-Word can do. Sad to say, the Linux/FOSS options regarding the ability to edit pdf files and fill in pdf forms under Linux is still greatly lacking.
